    Berry trifle with brown sugar mascarpone desserts recipes
        Ingredients

        2 x packs frozen mixed berries
        1/4 cup sugar
        1 unfilled sponge cake
        1/2 cup orange juice
        1 cup cream
        1 teaspoon vanilla extract
        2 tablespoons brown sugar
        600g mascarpone

        Method

        Step 1

        Combine berries with sugar in a large saucepan and cook for 10-15 minutes or until the sugar dissolves and the mixture becomes syrupy. Remove from heat and set aside to cool completely.
        Step 2

        Meanwhile, tear 1 unfilled sponge cake into large pieces and place over the base of a large glass bowl. Drizzle with orange juice then spoon half the berry mixture over the sponge layer. Place cream, vanilla extract, brown sugar and mascarpone in a large bowl and whisk to combine. Spoon cream mixture over the berry mixture. Top with remaining berry mixture and serve.
