Ingredients
2 litres vanilla ice-cream, softened
1/4 cup marsala wine (optional)
400g dark fruit cake, cut into 1cm cubes
100g packet mixed glace cherries, chopped
1/3 cup slivered almonds, toasted halved
Mixed glace cherries, to serve
Silver cachous, to serve

Method
Step 1
Line 8 holes of two 6-hole, 3/4 cup-capacity texas muffin pans with plastic wrap.
Step 2
Place ice-cream in a large bowl. Stir in wine, if using. Add cake, chopped cherries and almonds. Fold to combine. Divide mixture between prepared pan holes. Smooth tops. Cover with plastic wrap. Freeze overnight or until firm.
Step 3
Remove puddings from pan holes. Discard plastic wrap. Top with halved cherries and cachous. Serve.
