    Orange and mustard glazed ham desserts recipes

        1 4.5kg picnic shoulder ham or half leg ham
        Olive oil, to grease

    orange & mustard glaze

        100g (1/2 cup, firmly packed) brown sugar
        2 large garlic cloves, finely chopped
        3 oranges, rind finely grated
        1 tablespoon fresh orange juice
        1 1/2 tablespoons Dijon mustard
        1 teaspoon ground cinnamon
        3/4 teaspoon ground cardamom

        Step 1

        Remove the ham from the fridge. Set aside at room temperature for 1 hour.
        Step 2

        Place an oven shelf in the lowest position. Remove the remaining shelves. Preheat oven to 160°C. Brush a roasting pan large enough to comfortably hold the ham with oil to lightly grease. Line the base with non-stick baking paper.
        Step 3

        To make the orange & mustard glaze: combine the sugar, garlic, orange rind, orange juice, mustard, cinnamon and cardamom in a medium bowl.
        Step 4

        Remove net and rind from ham if necessary. Use a sharp knife to trim excess fat from ham, leaving a 1cm-thick covering. Use knife to score fat in a diamond pattern, at least 5mm deep. Place, fat-side up, on a roasting rack in lined pan.
        Step 5

        Spoon 1/2 the glaze over the ham to coat. Cook in preheated oven, basting with the remaining glaze every 20 minutes, for about 1 1/2 hours or until golden and heated through. Serve warm or at room temperature, cut into slices.
