Ingredients:

1/4 cup Shredded dry coconut (optional)

3 Tbsp Sweetener of choice (coconut palm sugar, pure maple syrup, or stevia)

How to make almond flour
1. Add two cups of almond to your food processor.
2. Switch it to high and mix for no more than 20 seconds. Repeat three times, until the almonds are ground.
3. In order to make it all smooth without any lumps, use a stainless steel sifter to sift the flour. Voila you have almond flour!

Filling:
1. Preheat oven to 180C
2. Combine all the dry ingredients in a bowl (almond flour, baking soda, vanilla, and shredded coconut)
3. In a separate bowl, add the coconut oil, eggs, and pure maple syrup (or whatever sweetener you are using)
4. Pour the wet ingredients onto the dry ingredients and mix until it is well combined and becomes dough like.
5. Scoop out the batter on a baking sheet like you would with any cookie dough.
6. Bake for 15-20 minutes or until its light golden brown.
