½ tablespoon Instant dry yeast
1 ½ cup warm water
½ teaspoon sugar
3 ½ cup flour
½ teaspoon salt
½ teaspoon cinnamon
½ cup powdered milk
1 egg
1/2 cup butter

Cinnamon sugar (brown sugar & cinnamon)
Melted dark and/or white chocolate
Icing sugar

Method
- In an electric mixer, combine flour, salt, cinnamon and powdered milk, on a medium speed.
- Add the rest of the ingredients, knead for not less than 15 minutes (or 25 minutes, if by hand), until soft, well combined dough is obtained.
- Form the dough into a ball, place in a greased deep bowl and let rise for 25 minutes until double in size.
- Cut the dough into an equal, apricot size balls, arrange in a greased tin, slightly press the balls to have a 7cm thick discs (make sure to press the edges as well).
- Let rise for another 45 minutes until double in size.
- Make holes in the centre of the discs using a circle cutter and preserve the yielded small balls.
- Deep fry the doughnuts turning once, until golden, also deep fry the small balls.
- Drain on a paper towel.
- Sprinkle with cinnamon sugar (place hot doughnuts in a plastic bag contains cinnamon sugar), or spread with chocolate glaze, or fill with custard.
