Beef and watercress crostini with mango chutney Recipe
Ingredients
350g pkt Bake at Home Turkish bread
Olive oil spray
2 Calypso mangoes, peeled, chopped
1/4 cup cider vinegar
2/3 cup brown sugar
1 red chilli, deseeded, chopped
2 limes
250g tub spreadable cream cheese
1/2 bunch watercress, sprigs picked, washed
20 slices (400g) roast beef, halved

Method
Step 1
Preheat oven to 180°C. Cut Turkish bread, crossways into 5mm slices. Place the slices on a baking tray and spray with olive oil spray. Bake for 3-4 minutes each side until light golden. Cool.
Step 2
Combine mangoes, cider vinegar, brown sugar, chilli, and lime juice in a microwave safe bowl. Microwave, stirring often, on High/100% power for 20-25 minutes until thick.
Step 3
Spread the crostini with cream cheese, top with watercress, beef and a dollop of mango chutney.
