Fig and hazelnut port puddings Recipe
Ingredients
600g dessert figs, chopped
200g pitted dates, chopped
1 cup port
200g butter
3/4 cup brown sugar
3 eggs
1 3/4 cups fresh breadcrumbs
1/3 cup plain flour
1/3 cup self-raising flour
100g hazelnuts, roasted and chopped

Method
Step 1
Grease 12 x 1 cup pudding moulds and line the bases with baking paper. Combine dessert figs, pitted dates, and port in a bowl. Cover and set aside overnight.
Step 2
Beat butter and brown sugar until creamy. Beat in eggs. Fold in fresh breadcrumbs, plain flour, self-raising flour and hazelnuts.
Step 3
Stir in the fruit and any liquid. Spoon into moulds. Cover moulds with baking paper and foil. Secure with kitchen string. Put in a baking dish and pour enough boiling water to come halfway up the sides. Bake for 1-1 1/2 hours. Serve with custard.
