    Bean, asparagus and cherry tomato salad Recipe
        Ingredients

        750g green beans
        3 bunches asparagus, cut into thirds
        750g cherry tomatoes, halved
        300g baby spinach leaves, trimmed, washed and dried

    Red wine vinaigrette

        60ml (1/4 cup) olive oil
        2 tablespoons red wine vinegar
        1 teaspoon caster sugar
        1 teaspoon wholegrain mustard
        Salt & ground black pepper, to taste

        Method

        Step 1

        Prepare the vinaigrette: Place the oil, vinegar, sugar, mustard, salt and pepper in a small screw-top jar. Shake well to combine.
        Step 2

        Bring a large saucepan of water to the boil over high heat. Add beans and cook, uncovered, stirring occasionally, for 3-4 minutes or until tender crisp and bright green.
        Step 3

        Use a slotted spoon to transfer beans to a strainer and refresh under cold running water. Drain well. Bring water back to the boil.
        Step 4

        Add asparagus and cook for 3-4 minutes or until tender crisp and bright green. Drain and refresh under cold running water. Drain well.
        Step 5

        Combine beans, asparagus, tomatoes and spinach in a large serving bowl. Pour over vinaigrette and toss to combine. Serve immediately.
