        1 lemon
        1 670g jar pitted Morello cherries, drained, halved
        1/2 small red onion, finely chopped
        1 teaspoon grated fresh ginger
        2 tablespoons shredded fresh basil

        Step 1

        Use a zester to zest the lemon. (Alternatively, use a vegetable peeler to peel the rind from the lemon. Use a small sharp knife to remove the white pith from the rind. Cut the rind into very thin strips.)
        Step 2

        Place the lemon rind, cherries, onion, ginger and basil in a medium bowl. Toss to combine.
