Ingredients
500g mixed dried fruit
125g glace ginger, finely chopped
100g glace cherries, finely chopped
250ml (1 cup) brandy, warmed
125g Western Star Butter, at room temperature
100g (1/2 cup, firmly packed) dark brown sugar
2 eggs
190g (1 1/4 cups) plain flour
50g (1/3 cup) self-raising flour
1 teaspoon ground ginger
1 teaspoon mixed spice
1/4 teaspoon bicarbonate of soda
90g (2/3 cup) pecans
Orchard White Icing, softened, to decorate
Pure icing sugar, to dust
Apricot jam, warmed, to brush
Bought vanilla custard, to serve

Method
Step 1
Preheat oven to 150°C. Combine dried fruit, glace ginger, cherries and 185ml (3/4 cup) brandy in a large bowl.
Step 2
Use an electric beater to beat butter, sugar and eggs in a bowl for 3 minutes or until pale and creamy. Stir in the fruit mixture. Sift over the combined flour, ginger, mixed spice and bicarbonate of soda. Stir in pecans. Divide among eight 185ml (3/4 cup) mini loaf pans, or eight 5cm (base measurement), 8cm (top measurement), 5cm-deep square cardboard cake cases. Smooth surfaces.
Step 3
Bake for 40 minutes or until a skewer inserted into centres comes out clean. Brush with remaining brandy. Set aside to cool completely.
Step 4
Roll out icing on a work surface dusted with icing sugar until 3mm thick. Cut shapes from icing. Brush cakes with jam. Top with icing shapes.
Step 5
Serve fruitcakes warm with custard.
