Oysters with pickled ginger dressing Recipe
Ingredients
4 green shallots, ends trimmed, cut into matchsticks
1 tablespoon mirin
1 tablespoon light soy sauce
1 teaspoon caster sugar
Ground white pepper
Rock salt or ice, to serve
24 Pacific oysters
1 tablespoon pickled ginger, drained
2 teaspoons toasted sesame seeds

Method
Step 1
Place the shallot in a bowl of iced water and set aside for 15 minutes or until shallot curls.
Step 2
Meanwhile, combine the mirin, soy sauce and sugar in a small bowl. Season with salt and ground white pepper.
Step 3
Arrange the rock salt or ice on a serving platter. Arrange the oysters on the platter. Spoon over the dressing. Top each oyster with shallot, pickled ginger and sesame seeds.
