    Lentiled rice recipe


    2 Tablespoons vegetable oil
    2 Medium onions, chopped
    2 cups red lentils, washed and drained
    1 1/2 cup medium grain rice, washed and drained
    5 cups water

    Tomato Sauce

    3 cups tomato, chopped with juice
    Salt and pepper
    1 teaspoon cumin, ground
    1 teaspoon vinegar (optional)


    - Heat oil in a sauce pan over a medium heat.
    - Add onions, stir till translucent, mix in lentils and rice, season with salt.
    - Cover with water, bring to a boil.
    - Reduce heat and cover till cooked.
    - Place tomato in a sauce pan over a medium heat, season with salt, pepper and cumin.
    - Add vinegar; let simmer for about 10 minutes, set aside.
    - Serve warm with tomato sauce and boiled eggs.
