    Oysters with nam jim dressing desserts recipes
        Ingredients

        1 long red chilli, roughly chopped
        2 cloves garlic, chopped
        2 coriander roots, washed, roughly chopped
        1/2 teaspoon caster sugar
        80ml (1/3 cup) fish sauce
        80ml (1/3 cup) lemon juice
        24 freshly shucked oysters
        Rock salt or ice and lemon wedges, to serve

        Method

        Step 1

        Process chilli, garlic, coriander, sugar, fish sauce and lemon juice in a food processor until smooth. Makes 180ml.
        Step 2

        Spread rock salt or ice over a platter and top with oysters. Serve with lemon wedges and nam jim dressing.
