    Parsley pesto recipe


    2 cups parsley leaves
    ½ cup pine nuts
    10 green olives, pitted
    4 dill pickles
    4 garlic cloves
    2 Tbsp vinegar
    1 Tbsp lemon juice
    ¼ tsp cayenne pepper
    1 cup olive oil
    Salt and pepper


    • Blend all ingredients in a food processor, gradually adding oil, to have a smooth well combined pesto.
    • Season with salt and pepper.
    N.B. ( This pesto could be served with grilled fish like salmon or grilled chicken, or used for marinating)
