    Sweet Potato- Sausage Casserole recipe


    Ingredients

    2 tablespoons oil
    5 shallots
    2 garlic cloves, sliced
    3 tablespoons pine nuts, roasted
    3 tablespoons pomegranate
    1 1/2 tablespoons pomegranate syrup
    Salt and pepper
    1/2 kilo sausages, small cubes
    2 orange sweet potatoes, boiled
    2 white sweet potatoes, boiled
    1/2 cup whipping cream
    1/4 teaspoon ground nutmeg (optional) 

    Method

    - Preheat oven to 180 degrees Celsius.
    - Heat oil in a pan over medium-high heat, add onion and stir till golden.
    - Add 2 tablespoon pine nuts and garlic to onion, stir for 2 minutes.
    - Mix in sausages and cook-over low heat for about 10 minutes.
    - Add 2 spoons of pomegranate and pomegranate syrup, season with salt and pepper.
    - Transfer mixture to oven dish.
    - Mash orange sweet potatoes; add half quantity of whipping cream, season with nutmeg, salt and pepper.
    - Repeat previous step with white sweet potatoes.
    - Place sweet potatoes separately in 2 piping bags.
    - Pipe into flowers shape on top of the sausage mixture.
    - Bake in over for about 30 minutes.
    - Serve warm and garnish with remaining pomegranate and pine nuts.
