10 parsley stems
2 celery stalks
1 red onion
1 tsp garlic, minced
½ kg diced tomatoes with juice
2 Tbsp olive oil
Salt and pepper
Method
• Cut vegetables into medium chunks.
• Put vegetables in a pan, over medium heat, add the tomatoes, let it
simmer for ½ an hour, stirring frequently, until well cooked.
• Let it cool, blend vegetable mixture, put it back in the same pan.
• Add olive oil, season with salt and pepper, let it simmer for 15 minutes, stirring frequently.
• Veal chops or any other meat cuts, could be cooked in this sauce, or could be served on the side.
