Ingredients
2 litres vanilla ice-cream
1 cup Fruit mince (see related recipe)
110g packet dry-roasted macadamia nuts, chopped
1/3 cup shredded coconut, toasted

Method
Step 1
Transfer ice-cream to a large bowl. Set aside for 10 minutes or until softened (not melted). Stir in fruit mince, macadamias and coconut. Return to container. Cover surface with plastic wrap, then lid. Freeze overnight.
Step 2
Serve ice-cream in cones or cups.
