        Ingredients

        24 fresh oysters, on 1/2 shell

    Salsa

        1 mango, peeled, flesh removed
        1 red capsicum, de-seeded, membrane removed
        1 red onion
        1/4 cup chopped fresh coriander
        1 tablespoon fresh lime juice

        Method

        Step 1

        To make the salsa, finely dice the mango, red capsicum and red onion. Combine the mango, red capsicum, onion, coriander and lime juice in a bowl and mix well.
        Step 2

        To serve, top each oyster with 1 teaspoon of salsa.
