    Seasoned Roasted Vegetables recipe


    4 carrots, quartered
    2 potatoes, quartered
    2 sweet potatoes, quartered
    2 zucchini, halved
    5 red onion, halved
    1 small garlic head, peeled
    3 tablespoons olive oil
    Salt and crushed black pepper
    Fresh oregano for garnish 


    - Preheat oven to 180 degree Celsius.
    - Mix ingredients with oil, season with salt and pepper.
    - Arrange vegetables (each kind separate) in an oven dish with little water.
    - Distribute garlic on top of vegetables.
    - Cover dish with aluminum foil, place in oven for 20-25 minutes.
    - Remove foil and bake in oven for another 15 minutes till done.
    - Serve warm.
