Avocado and prawn couscous with lime Recipe
Ingredients
1 bunch fresh coriander, chopped
10 cooked prawns, peeled, deveined, halved lengthways
1 large avocado, halved, stone removed, peeled, chopped
250g San Remo couscous
4 shallots, trimmed, sliced
2 ripe tomatoes, chopped
Lime dressing
1/3 cup (80ml) extra virgin olive oil
1 tablespoon honey
2 limes, rind finely grated, juiced
Salt & freshly ground pepper

Method
Step 1
Place couscous in a heatproof bowl. Add 2 cups (500ml) warm water and set aside for 15 minutes or until the liquid is absorbed. Use a fork to separate the grains.
Step 2
Stir in the shallots, tomatoes, coriander, prawns and avocado.
Step 3
To make the lime dressing, combine the oil, honey, lime rind and juice. Season with salt and pepper.
Step 4
Pour the dressing over the couscous mixture and toss well. Serve immediately.
